Tommy and I tried making a huge breakfast casserole about 2 nights ago so that we would have leftovers for a while but it ended up turning into a quiche. It was so delicious that I didn't get a chance to put pictures up of it because we started eating it as soon as it came out of the oven lol I decided to try making something new today, here is the recipe:
Meatless Breakfast Casserole
Hashbrowns (I got a big bag from the frozen foods section)
Eggs
Shredded Cheese (any flavor that you like)
Seasonings of your choice
I didn't put the amount of each ingredient because you can have as much or as little of the ingredients as you want, everyone has a different taste preferences.
Cook whole eggs in boiling water for 10 - 12 minutes. Once they are done, pour out the hot water (you don't need to get all of it out), place the pot under the sink faucet, and turn on the cold water. Leave the eggs under cold running water for 10 - 20 minutes (the colder the eggs are, the easier it will be to take the shell off).
Once you have the eggs shelled, we can start layering the ingredients in a dish. I used a 8x8 baking dish since there's only 2 of us but you can use any size dish that you want.
First layer the hashbrowns on the very bottom of the dish. Next, place a layer of sliced eggs on top of the hashbrowns (I sliced the eggs as I was layer them). After that, place the cheese on top of the eggs. Repeat until you get to the top of the dish. As for the seasonings, you can place them on all the layers or just the very top, whichever you prefer.
Cover the casserole with aluminum foil and bake it at 400°F for 1 hour. Then, turn the oven down to 325°F and bake for 15 more minutes. Once it is done, let it cool for 10 - 15 minutes before serving.

We did have sausage though, and 3 cans of crescent rolls so I decided to make something with that.
Sausage Rolls
16 sausage links
2 cans of Crescent rolls
Cook the sausage links on a pan until they are done.
Take them out of the pan and let them cool.
While the sausage is cooling, pre-heat the oven to 350°F.
Take the crescent roll dough out of the cans and separate the triangles. These are the ones I used:

Place a sausage link on the widest part of the triangle and roll it towards the other end.
Place the rolled sausages on a baking sheet and bake them for 12 minutes.
Once they are done, let them cool before serving. Enjoy!
